Smoky Chipotle BBQ Doritos Casserole

1 pound ground chuck

1 cup onion, diced

1/2 teaspoon chili powder

1/2 teaspoon ground cumin

Pinch kosher salt

2 cups salsa

1 tablespoon tomato paste

1 1/2 cups sour cream, divided

1 bag frozen corn

1 cup chipotle Gouda cheese

Pinch fresh ground black pepper

1 bag Smoky Chipotle BBQ Doritos – crushed up


In a medium sauce pan add ground chuck, onion, chili powder. Cook ground chuck until done (no longer pink)

Add 2 cups of salsa, tablespoon of tomato paste and frozen corn.  Simmer for 5 minutes and remove from heat.

Crush the Smoky Chipotle BBQ Doritos using a meat tenderizer.

Spray the bottom of a baking pan with canola oil and start layering the casserole.

Start with a layer of crushed Doritos, a layer of meat mixture, half of sour cream and half of the chipotle Gouda cheese.  Continue layering ingredients until casserole is complete.  Top the casserole with remaining crushed Doritos.

Preheat oven to 375 degrees.

Cover pan with aluminum foil (or a lid) and bake for 20 minutes.  Remove (or lid) after 20 minutes and continue baking for another 10-15 minutes.  Remove casserole from oven and let rest for 15 minutes before serving.
