Bacon Wrapped Shrimp Stuffed with Stilton Bleu Cheese

This recipe had me at the Bacon!  Jerry’s daughter shared this recipe with me a few years ago.  I made these tasty little appetizers before many of our dinner parties and they were always a big hit. They are bite size little bundle of goodness served on a toothpick and are easy to eat while holding a glass of wine and a napkin.  Jerry would always say, “Hey babe, would you put me a couple aside for tomorrow lol”  Yes they were tasty the next day also!  You can’t go wrong with these savory little bundle of goodness.  Guaranteed to make your guests ask for them time and time again.  Here’s the recipe for “Bacon Wrapped Shrimp Stuff with Stilton Bleu Cheese”  Enjoy!

SERVINGS: 16 (enough for 8 people – 2 servings per person)

16 slices bacon

16 large cooked shrimp, tails removed, deveined and cleaned

1/4 pound Stilton Bleu cheese

1/2 cup your favorite barbecue sauce



Prep Work; Measure out 1/2 cup of your favorite barbecue sauce and set aside. Remove tails from shrimp, cut down center remove unwanted veins and any dirt. Rinse and drain on a paper towel.

Add parchment paper or aluminum foil to a baking sheet pan – place a wire rack inside pan and set aside until you are ready to use.

Measure out the Stilton Bleu cheese pieces using a 1/2 teaspoon. Roll each piece into a small ball – place on a plate and put in refrigerator until ready to use.

Partially cook bacon (do not cook until crispy). Drain on a paper towel and cool.

Lay shrimp on a work board – Place a scoop of  Stilton Bleu cheese with each shrimp.

Start wrapping bacon from large end. Make sure the Stilton Bleu cheese is completely covered.

Secure each bacon wrapped shrimp with a toothpick.

Start preheating oven to broil

Brush wrapped shrimp with barbecue sauce on all sides.

Lay wrapped shrimp on wire rack in the prepared sheet pan.

    Oh my, if I were home I’d try this recipe right now. You have no idea how much I LOVE these three ingredients. I would never have thought to put them together. I’m going shoppig after work and cooking tonight for sure ! ! ! Thanks for the great recipe !
