My 2nd food entry – Pulled Pork Po-Boys topped with Awesome Onion Rings

This is the 2nd food entry I was going to enter into the “Smoked Meat Leftovers Contest”  – Pulled Pork Po-Boys on a buttery hoagie roll topped with; Awesome Onion Rings  served with Crispy Baked Kale Chips and Pepperoncini’s

 Here’s how I made my Crispy Baked Kale Chips. See my “Awesome Onion Rings” recipe posted on 8-2-14.

1 bunch fresh kale, rinsed clean

2-3 tablespoons olive oil

2 teaspoons of your favorite *All Purpose Veggie Seasoning

*(I used Chef D’s Soul D’Licious Veggie Seasoning – see info below)

ground black pepper

Add olive oil, 2 teaspoons of All Purpose Veggie Seasoning and ground black pepper into a large bowl.  Whisk together until well combined.

Add the fresh kale and toss together until all the kale leaves are coated with olive oil and seasoning mixture.

Line a sheet baking pan with foil and spread kale on the sheet pan in one layer. Sprinkle with a little more veggie seasoning if desired.

Bake in a 375 degree oven – bake until crispy, about 8-10 minutes. Serve immediately.
