I made my pizza dough according to instructions on the back of this package of Fleischmann’s Pizza Crust Yeast.

Pizza crust yeast

Mix into well combined.  The dough will form a nice soft ball.

Roll out dough on a pizza stone or if you don’t have a pizza stone you can use a pizza pan.

I generously brushed roasted garlic infused olive oil on the pizza dough.

Added mozzarella cheese, roasted red and green bell peppers.

IMG_1194

Add chopped spinach.

IMG_1195

I chopped up my pulled pork and added it on top along with some more diced red onions.

IMG_1198

I added crumbled feta cheese on one side.

IMG_1199

Added shredded mozzarella cheese on the other side.  Roll edges up around the pizza.  This will keep everything from sliding off the side during the baking process.

Making the Pulled Pork Cigars

I chopped up 2 cups of pulled pork.

IMG_1166

Added chopped pulled pork to a small saucepan. Added 2 tablespoons fresh salsa, 2 tablespoons diced red onions.  Heated until ingredients were warmed through.

IMG_1169

Add enough canola oil in a heavy skillet.  Heat over medium high heat.  I put the corn tortillas into the hot oil for a second or just long enough to make the tortilla shells soft and pliable.

IMG_1170 IMG_1172

Add some pulled pork and a sprinkle of Mexican Four Cheeses. Rollup tightly.

IMG_1173 IMG_1175

Fry until crispy and golden brown.

Serve immediately with fresh salsa (preferably homemade) and Homemade Crème Fraiche.  I will post the recipe for my “Homemade Crème Fraiche” in a new post.  I always have Crème Fraiche on hand in my fridge.
